Why logs, and which species work best outdoors?
Log cultivation works because mushrooms are wood decomposers. When you introduce spawn into freshly cut wood, the mycelium colonises the log over months, breaking down the timber from inside. Unlike bag or box methods, logs need no artificial substrate or sterilisation—they're already sterile when freshly felled. This makes the method cheaper, lower-waste, and genuinely interesting to watch as a learning process.
Species matter enormously. Shiitake, oyster, wine cap and king trumpet mushrooms all fruit reliably on logs in the UK climate. Shiitake prefers oak or beech and is slower but rewarding. Oyster species are faster, more forgiving, and fruit across a wider temperature range. Logs should be 10–15 cm in diameter and 30–40 cm long; they're easier to handle and colonise faster than thicker logs.
Source timber locally if you can. If you're in West Norwood or South London, arborists, tree surgeons, and local parks often have freshly cut logs available. This keeps your growing transparent and rooted in place—you know where your wood came from, and you're not transporting material far. Avoid logs treated with chemicals or from diseased trees.
How do you inoculate logs with mushroom spawn?
Inoculation is the critical step. You drill holes into the log—roughly 10–15 cm apart in a spiral pattern—insert grain spawn (mushroom mycelium grown on sterilised grain), and seal the holes with beeswax, plastic dowels, or food-grade wax. The spawn then germinates inside the log, spreading through the wood over weeks and months. Temperature matters: spawn colonises fastest between 15–20 °C, which suits UK autumn and spring.
You can buy grain spawn from suppliers or cultivate it yourself with basic equipment. What happens during colonisation and how long does it take?
After inoculation, the log must colonise. You stack inoculated logs in a shaded, humid spot—under a tree, against a north-facing wall, or under a cloth shelter. Water them gently when the wood surface dries; logs need consistent moisture without becoming waterlogged. Oyster varieties may colonise in 3–4 months; shiitake takes 6–12 months or longer. You’ll eventually see white mycelium creeping across the log’s surface or emerging from the holes.
Patience is the real skill here. Don’t rush fruiting. Logs colonise fastest when left undisturbed in cool, moist conditions. Proper colonisation is the foundation of reliable harvests.
When and how do you trigger fruiting?
Once fully colonised, a log needs a ‘fruiting trigger’: a change in environment that tells the mycelium to produce mushrooms. The simplest method is soaking. Submerge the colonised log in water for 12–24 hours, then stand it upright in shade. The waterlogged wood triggers fruiting within days or weeks. Temperature swings—a cold night after a warm day—also work. In the UK, autumn and spring naturally provide these conditions.
After soaking, keep the log moist and shaded for the next 10–14 days. Mushrooms will pin (form tiny buttons) on the log’s surface or from the inoculation holes. As they grow, increase humidity by misting if the air is dry, but avoid waterlogging. A single log can fruit multiple times over two or three years, with harvests spaced weeks or months apart.
Harvesting, storage and what to do next
Harvest mushrooms when caps are still slightly concave or just beginning to flatten—before they drop spores. Twist them gently at the base or cut with a knife. Fresh gourmet mushrooms have a short shelf life; refrigerate them unwrapped in paper for up to a week. If you’re selling or gifting them, handle with care because bruising shows quickly.
A single log yields 10–30 mushrooms per flush, depending on species and size. After harvest, rest the log for 4–8 weeks, then soak again to trigger another flush. A well-managed log produces for two to three seasons before the wood fully decays and mycelium exhausts the substrate. At that point, you can inoculate fresh logs and cycle the exhausted wood into compost.
