Straw must be pasteurised (heated to 65–82 °C) to kill competing moulds and bacteria without destroying the structure. We favour locally sourced straw where possible, both for environmental reasons and because we can inspect its quality.

Hardwood sawdust and chips are essential for species like shiitake, maitake and lion’s mane, which require lignin-rich substrates. Hardwoods such as oak, beech and alder break down more slowly than softwoods, creating a denser, more nutrient-stable medium that supports fruiting over weeks or months. Sawdust must also be sterilised, typically under pressure at 15 psi for 2–3 hours, to guarantee pathogen elimination.

Blended substrates combine straw, hardwood sawdust, bran and sometimes coffee grounds or agricultural waste to suit specific species or extend yield cycles. Supplementation with wheat bran or oat bran increases available nitrogen and accelerates colonisation. How do you prepare growing medium to prevent contamination?

Preparation is where substrate success or failure is decided. Raw organic material harbours competing moulds, bacteria and insects. Pasteurisation (heating to 65–82 °C for 30–60 minutes) is sufficient for straw-based substrates and less equipment-intensive than full sterilisation. Sterilisation under pressure (121 °C, 15 psi, 2–3 hours) is necessary for sawdust and denser media, and is non-negotiable if you’re working in a small space where cross-contamination risk is high.

After heating, the substrate must cool completely before inoculation. Any residual heat kills the mushroom spawn. We cool substrates at room temperature, covered to exclude airborne spores. Moisture balance is critical: the medium should feel like a wrung-out sponge when squeezed—damp but not dripping. Too dry, and mycelium stalls; too wet, and you invite bacterial rot. We test moisture by feel and adjust before packing into grow bags or containers.

What should you look for when sourcing substrate materials locally?

Sourcing locally saves cost, reduces transport emissions, and lets you inspect materials for quality. Straw is widely available from agricultural suppliers, garden centres and smallholdings across South London. Ask whether it’s been treated with pesticides or stored damp; clean, dry straw is non-negotiable. No. Garden compost and potting soil are formulated for plants, not fungi. Mushrooms need substrates rich in cellulose and lignin—plant-based organic matter that fungi can break down. Commercial composts often contain fertilisers and amendments that inhibit mycelium or invite contamination. Always use purpose-prepared substrates: straw, hardwood sawdust, or formulated blends sterilised to eliminate competitors.

Do I need to sterilise substrate, or is pasteurisation enough?
