Why does the growing medium matter so much?
The medium is not just soil—it’s the food and home for your mushroom mycelium. Every mushroom species thrives on different nutrients, and the medium you choose directly affects how quickly the mycelium colonises, how robust the fruiting bodies are, and ultimately what the mushroom tastes like. A oyster mushroom grown on straw will have a different texture and earthiness than one grown on hardwood sawdust. When we prepare batches for West Norwood Feast or the South London Mushroom Club workshops, we choose mediums not just for yield, but because they deliver the flavour and texture our local chefs and growers expect.
The medium also determines your labour input and success rate. A poorly chosen or badly prepared medium can lead to contamination, slow growth, or weak fruiting. Conversely, the right medium, properly sterilised and inoculated, reduces your risk and lets the mycelium do what it does best. What are the main types of growing medium, and which mushroom species suit each?
Straw is the most accessible and affordable medium for beginners. It’s ideal for oyster mushrooms, which are vigorous colonisers and tolerant of variable conditions. We use straw frequently because it’s abundant, can be sourced locally, and breaks down quickly once fruiting finishes, making it easy to compost. Wine cap mushrooms also perform well on straw. The downside: straw alone is low in nitrogen, so oyster mushrooms fruiting on pure straw are smaller and lighter than those on enriched mediums.
Hardwood sawdust—particularly from oak, beech or ash—is denser and more nutrient-rich than straw. Shiitake, lion’s mane and maitake all prefer sawdust, and the slower colonisation time actually suits their biology. Hardwood sawdust takes longer to break down, so it supports multiple flushes of mushrooms across weeks or months. It’s the medium of choice if you want complexity and depth of flavour; the slow nutrient release creates firmer, more flavourful fruiting bodies. We favour hardwood sawdust in our small-batch production for local restaurants because the results justify the longer cultivation window.
Compost and enriched blends sit between the two. We prepare custom blends—straw mixed with horse manure, woodchip, or agricultural waste—for button mushrooms and some specialty species. These mediums are richer but require more careful sterilisation to prevent contamination. They’re more forgiving for growers who want faster results, but they demand better technique.
How do I prepare and sterilise the medium correctly?
Preparation begins with sourcing. We source straw from local farms where possible—it’s fresher, traceable, and supports the South London food system. Sawdust comes from sawmills or timber merchants, never pressure-treated wood. Once sourced, the medium must be cleaned of competing organisms and pest spores. For straw, a hot-water soak at 80°C for 1–2 hours pasteurises it without destroying the fibre structure. For sawdust, boiling water or steam is more reliable. Pressure cookers work for small batches; larger operations benefit from larger sterilisation vessels.
The goal is to kill competing moulds and bacteria while keeping the medium nutritionally intact. Under-sterilised medium leads to contamination—green mould or bacteria blooms that outcompete your mushroom spawn. Over-sterilised medium (especially if left to cool and recontaminate) wastes time and energy. We teach this balance in our cultivation workshops because it’s where most new growers stumble. Once sterilised and cooled to room temperature, the medium must be inoculated promptly with your mushroom spawn to prevent ambient spores colonising the empty space.
Does local sourcing of medium affect the final mushroom?
Yes—indirectly and meaningfully. When we source straw from South London suppliers or sawdust from local timber merchants, we know its age, history and storage conditions. Old straw, stored damp, may already carry mould spores. Fresh straw from a nearby farm is cleaner and faster to colonise. Over time, using the same local sources builds consistency in your batches because the medium itself is consistent. The mycelium responds to that reliability with more uniform fruiting and predictable yields.
There’s also a flavour dimension we’ve observed. Mushrooms reflect their environment. Oyster mushrooms grown on straw from organic farms in South London taste subtly different from those on commodity straw—slightly more mineral, less generic. This matters when you’re selling to restaurants or serving at a community event like West Norwood Feast. Transparency about sourcing builds trust, and consistency builds reputation. We document our medium sources because our growers and chefs want to know where their food comes from.
What about reusing medium, and when should you replace it?
Spent medium—the substrate after the final mushroom flush—is valuable. It’s colonised by mycelium, enriched with fungal biomass, and breaks down readily. We compost all spent medium and either return it to growers as finished compost or donate it to local gardens. Reusing the same medium a second time is risky. Even after sterilisation, residual mycelium from the first crop can create weak spots where contaminants hide. For home growers, it’s simpler to treat medium as single-use and compost it afterwards.
Some growers, particularly those running larger operations, layer spent medium with fresh material to stretch costs. This works if you’re diligent about sterilisation and monitoring, but it introduces variables. For learning and for consistent results, fresh medium per crop is the safest approach. We recommend this in our workshops because it removes one source of failure and lets you focus on technique.
How much medium do I need, and how do I scale up?
A small home kit using our grow kits typically contains 5–10 kg of prepared medium, enough for one flush of oyster mushrooms in 2–3 weeks. If you’re building your own, a 5-litre container needs roughly 2–3 kg of dry straw (which swells when hydrated). The ratio depends on the medium type and your container shape, but the principle is consistent: medium should be moist, not waterlogged, and loosely packed to allow air flow and mycelium spread.
Scaling up is where medium preparation becomes a project. Moving from one kit to ten bags means sourcing 30–50 kg of straw, setting up a reliable sterilisation method (a large pot, a pressure cooker, or a drum with steam), and storing prepared medium safely until inoculation. Many growers in the South London Mushroom Club started with kits, then invested in a second-hand pressure cooker and bulk sourcing when they committed to regular growing. This progression is natural and practical—start small, learn the medium, then scale your sourcing and sterilisation in step with your confidence.
