Most ‘fresh’ mushrooms in London have travelled a long way and sat in cold storage before they reach a shelf. Mine haven’t. Adi’s Urban Mushrooms is a non-profit social enterprise growing gourmet varieties inside the city itself, in a controlled studio in West Norwood—which means what you buy was growing until harvest day, and typically reaches you within 48 hours of picking. The difference shows in the pan: firmer flesh, better colour, flavour that stands up instead of collapsing into water.

Year-round you’ll find oyster and shiitake; through the seasons I rotate specials—lion’s mane, king trumpet, wine caps—depending on what the growing conditions allow.
